A remarkable history, in the heart of the great Champagne vineyards
Located in Aÿ-Champagne, the Ayala House was founded by Edmond de Ayala in 1860. Curious and daring, he has always cultivated the taste to go further.
In 1865, the House launched the "Dry Champagne" with only 21g/L against a traditional French dosage of more than 150g/L at the time. A real bias!
From the very beginning, the young House has been an essential reference, being one of the founding members of the Syndicat des Grandes Marques in 1882.
In 1908, the House continued its expansion in England until it was awarded the Royal Warrant at the coronation of King Edward VII. The House of Ayala then exploded its brand image.
With more than one million bottles produced in 1920 during its golden age, the House was one of the greatest Champagne Houses of the time.
In 2005, it was acquired by the Bollinger family. This acquisition provided the House with a modern winemaking tool, in keeping with the qualitative ambition of Ayala Champagnes.
In 2014, the style of the wines is affirmed around the Chardonnay grape variety. The brand identity was completely rethought with the creation of new packaging inspired by the historical codes of the House.

Each year, at harvest time, grapes from the finest terroirs in Champagne are hand-picked.
Diversity is one of the specialities of the Ayala House, it contributes to the complexity and balance of the blends.
Each grape variety, each vintage and each year is vinified separately to preserve the expression and the typicity of the Champagne terroirs.
