Our food and seasonal wine pairings

As summer approaches, discover our sunny food and wine pairings that will delight your taste buds!

 

For that purpose we propose to you:

 

1. Shrimps cooked in garlic sauce

This dish will go perfectly with a wine with a nice acidity and freshness to play with the strength of the persillade.

Its partner of shock: Cuvée Lou Peyrette 2018, AOP Picpoul de Pinet - 75cl, 13.5°.

With a lemon and grapefruit nose, it will give you a lively attack in the mouth. Freshness and some acidity with a touch of bitterness at the end of the mouth will be there.

 

2. Grilled Mackerel

A fresh wine to underline the flesh of the mackerel with fruity aromas to bring tonus will be ideal. The fine bubbles will enhance the aromas of the fish.

 

Perfect Wedding : Crémant Riesling Frey Sohler, AOP Crémant d’Alsace – 75cl, 12°

Fruity nose, complex with aromas carried by the fruit, this crémant d'Alsace is fresh, structured and fine. It offers very pleasant lemony aromas on the palate.

 

3. Poultry breast stuffed with spinach and chavignol dung

For this dish, favour a wine with a nice acidity to contrast with the texture of the dung and a touch of minerality to accompany the ferrous character of the spinach. A wine from the region where the cheese is made should be used.

 

Our selection: Menetou Salon White 2018, AOP Menetou Salon - 75cl, 13°.

This wine offers us a nose of citrus fruits and white flowers, powerful, deep, complex. On the palate, a great minerality is felt. The finish is long and pleasantly iodized.

 

4. Duck Breast Kumquat Juice and Thyme

A wine of character to stand up to the power of the Duck but not too full-bodied so as not to mask the Kumquat. Garrigue aromas will make the link with the thyme (aromas that we find on the Carignan grape variety).

 

His ideal : Château du Vieux Parc " La sélection ", AOP Corbières - 75cl, 14,5°.

The Southeast in this bottle! A nose of blackberry, blueberry and liquorice which continues in the mouth for a juicy and greedy whole.

 

5. Strawberry Tiramisu

An effervescent with fine bubbles and fresh to counter the smoothness of the dessert. A rosé with red fruit aromas to harmonize with strawberries is preferred.
