Salmon steaks with citrus fruits
Ingrédients
  • For 2 persons :
  • 2 salmon steaks
  • 1/2 lemon
  • 1/2 orange
  • 13 g fresh ginger
  • 2 sprigs of thyme
  • 1/2 spoon of sugar
  • 1 spoonful of rice vinegar
  • 1 tablespoon of olive oil
  • Salt and pepper
Présentation
  • 1Rinse your salmon steaks in cold water and drain.
  • 2Sprinkle your salmon steaks with salt, pepper and thyme.
  • 3Prepare your citrus fruits, wash them and finely remove the peel. Scald the peels for a few moments, drain them and rinse them in cold water.
  • 4Squeeze the lemon and orange, mix the two juices and set them aside.
  • 5Peel your ginger and grate it finely.
  • 6In a large pan, pour in the vinegar, add the sugar and heat until your vinegar has evaporated and you have an amber caramel.
  • 7Once the caramel is obtained, add the citrus juice, zest and ginger. Let it reduce and add the olive oil.
  • 8Place your salmon steaks in the pan with the sauce and cook over a low heat for three minutes on each side. Enjoy!
