What are fruit wines and how are they made?

With the arrival of seasonal fruits and edible flowers, it's the perfect time to create your fruit wine!

Fruit wines are made from pressed fruit juice that is matured like grape wine.

First you need to make a selection of fruit.

Then you grind the fruit to extract the juice. Tip: To avoid contaminating the fruit wine, the fruit must be very clean. Once the fruit has been crushed, pour it into a stainless steel vat. A night in a cool place will be necessary for the lees to decant.

After this stage comes the correction of the must, i.e. the juice that has not yet undergone alcoholic fermentation. To come and correct this must, you have to add yeasts to the juice. The must will then ferment in a vat inside a room with a constant temperature of 21-22°C.

Then let your fruit wine mature in a vat for one year. You will have to think about changing your wine 4 to 5 times during this year. This long period of time allows your fruit wine to clarify naturally and to mature.

It is also possible to make a good fruit wine, with wine, a little brandy, sugar and fruit (or flowers).
